SHRIMP SPRING ROLL SALAD

In todayās video, Iām showing you how to make my go-to Shrimp Spring Roll Salad
Itās been on repeat at my house lately
Packed with fresh veggies
Tossed in a creamy peanut ginger dressing
And itās seriously so satisfying šš
Ingredients:
For the Salad:
8 ounces rice noodles, cooked
1 cup purple cabbage, finely shredded
2 Persian cucumbers, sliced thin
1 red bell pepper, sliced
1 bunch green onions, finely chopped
2 carrots, sliced thin
1/4 cup cilantro, chopped
1/4 cup salted peanuts, chopped
1 pound shrimp, cooked
For the Dressing:
1/2 cup creamy peanut butter
1 lime, juiced
1/4 cup coconut aminos (or 2 tsp fish sauce)
2 tbsp rice vinegar
2 tbsp freshly grated ginger
2 tsp maple syrup
1 tsp sriracha (optional)
3 tbsp water (plus more, if needed)
