Have you ever made a salad so good…
you literally can’t stop thinking about it?? 🤤💭
I didn’t expect this to be that salad
but now I’m hooked...
and so is everyone at Fit Club asking for the recipe! 😍🥑
This one’s light, zesty, and straight-up refreshing 🌶️💚
With a creamy avocado dressing that pulls it all together 🔥
Ingredients:
1 1/2 cups corn kernels (from 2 ears fresh corn, boiled and cut off the kernels)
1 cup shredded purple cabbage
1 red bell pepper, stemmed, seeded, and diced
1 1/2 cups black beans, drained and rinsed
1/3 cup red onion, diced
1 jalapeño, seeded and diced
2 cups romaine lettuce (not added here because I forgot to get it!)
1/2 avocado, pitted and diced
Dressing:
1/4 cup fresh lime juice
1 clove garlic, grated
3/4 tsp sea salt
Freshly ground black pepper
1/2 avocado, pitted
1/4 cup plain, unsweetened Greek yogurt (0% or low fat)
1 cup cilantro
1 tsp honey
Yup—it's the salad of the summer
